The candidness was not necessarily intended in un unprofessional way. One difference between countries across Europe is what is deemed professional and unprofessional. England specifically would usually value a coy and very subtle approach to business/professional communication. Other nations, and I'm not expert on Austria but I do believe Austria might be among them, would value a more direct and transparent way of communication. Not every nation in the world practices the art of subtleties like the English. This is why, I believe, that sometimes you have foreign players, but managers especially, who has a very direct approach in for instance press conferences. Either because they are unaware of the cultural need for subtlety, or aware of it but couldn't really give a fuck.
As for Wimmer's future, after having progressed from two to three CBs and he is still not even on the bench often, writing is on the wall. I never thought he did THAT good in the absence of Vertonghen, and in my onions, I wonder whether his fitness level is not up to Pochettino's standards. Wimmer always looks to me as if he is a little bit too bulky in the wrong way.
