1. Riedewald for Wimmer as LCB backup, but also, alongside Dier able to cover Wanyama in DM.
2. Barkley for Lamela (if he goes), able to cover Eriksen and Alli, but longer term could become Dembele replacement with some refining of his natural strength on the ball.
3. Schick/Dolberg or Zaha for Sissoko, slightly different players, but would give us attacking alternatives.
4. Lopez for Vorm.
5. Kondogbia (or maybe Zakaria) for Bentaleb, both able to play CB/DM/CM, providing flexibility.

Add Sessegnon maybe, with an eye on the future. Maybe loan back, but if not, adds flexibility, could play higher up with his pace if needed, but also LWB option.

Barkley play more central than Lamela. Spurs did miss Lamela's creativity at times and if he should he leave then I much rather prefer a genuine WF (maybe Bruma, Redmond, or even Felipe Anderson or Mahrez; the 2 last maybe too pricey).
Kondogbia is not going to join Spurs to be 3rd choice DM.
Dolberg and Schick not slightly different players than Sissoko but very different - both are CF. Besides, Dolberg has said he's staying another season at Ajax.

He's better than him and has a way higher ceiling. He has put in impressive champions league performances.

In the EPL he may not be better than Trippier despite of his good form in the EPL and Primeira Liga.

Unfortunately, it sounds like all the clubs rumored to want Walker are also targeting Semedo. Chances are he ends up at the "loser" of the Walker Race. Highly unlikely it's us.

Would like to loan Wimmer out rather than sell. His value will have gone down after so few matches. Would like to loan him to palace and use him as a sweetener in the zaha deal

Defoe on a one year rolling deal wouldn't be the worse move. I've not been his biggest fan over the years but I think he's done ok at Sunderland considering how dire they've been.
