We played 3 at the back against Watford last year and expect the same

In fact, Spurs haven’t lost their first Premier League game of a calendar year since 2009 (0-1 at Wigan). Watford have lost their opening league game of a calendar year for five successive years now (2012, 2013, 2014, 2015 & 2016).
