There is literally nothing Levy can do other than decide whether to take a fee in the summer or let him leave on a free a year later. Its up to Eriksen whether he wants to stay.
Any player will be acutely aware of Levy wringing every penny he can out of buying clubs, limiting their choices to the few clubs rich enough to meet the demand.
In that regard, if they player has an inkling they want to leave, they're in a far better position to get a move with less time on their contract. I strongly believe this is what Eriksen, Vertonghen and Alderwierald have been doing.
It doesn't mean they 100% want to leave, but they know that they have a far better chance, with more choice, if they only have 1 year left.

I seem to be alone but I have always been of the opinion if they don't want to commit to spurs then sell for as much as you can get and buy the best you can get that wants to play for spurs (wants to play for spurs) and does not have their head in some cloud elsewhere .
Some have said he is irreplaceable and that to me is hogwash as every player at some time has to be replaced ; the only difference is that some players are replaced earlier because of injury or age or bad attitude or in the case of Erricsen some kind of crush on the Spanish elite promoted by the Danish media.
I am not saying anything about the lure of Barca or Real Madrid all I am saying if they don't want to commit to spurs so be it .
Sell them for the best price and get someone in who actually wants to play for us and even us (lowly Tottenham Hotspur) have surely one or two that would be happy to commit and not use us as a stepping stone to The mega rich clubs who can guarantee trophies almost every year . If you are happy to be seen as a stepping stone for some players ambition then O.K.
Well I say I would aim for players that have one intention that is do their best for the team they are playing for with the ambition to bring success the club they are signed for not always with one eye on their ultimate goal (to play for the mega rich that guarantees trophies)

Assuming Eriksen was circa £100m, then £60m ish for De Jong or Werner, £20m ish for Sanabria or Grillitcsh/Berge, the the remainder on a player with potential.
