I wonder why poch wants to play 3 at the back if all the cb signings are pointing toward that, we had a great defensive couple of years

We played 3 at the back for a large part of last season. It would appear that Dier would prefer to play CM again (as he did year before Wanyama arrived), and we now have more options at both CB and DCM as a result.

I think he wants the option of being able to switch it around. It means we lose one of our supporting three behind Kane however. It seems to have helped us overcome teams set out to grind out 0-0 draws when they were able to predict out 4-2-3-1 positions.

I like seeing that formation because I want to see Kane, Eriksen, Dele and Son all on the pitch along with Dembele and Wanyama, but the problem becomes the frustrating draws that have prevented us winning the league the last two terms.

So having a robust alternative for "3/2-2-2-1" (i.e. 5-2-2-1 with wing backs) with good CBs who can deputise for Jan and Toby and slot into a back 3 is essential.

Dier did it, but clearly he wants more competition and perhaps doesn't feel Wimmer is good enough.

Pretty much this.

I thought we looked best when playing a back 3 last season, largely in part to the full backs who were key to the formation. This is certainly a formation that suits us, and it's great to have the option to switch up if a 4-2-3-1 isn't working.

3 at the back suits us with our current squad. Trippier and KWP are much more dangerous going forward than Walker ever was and 3 CBs can cover the flanks better. Sanchez and (probably) Foyth would suggest more CB options who are comfortable bringing the ball out, but I don't see Poch dropping Dier and I also don't see Dier getting into CM too often with Wanyama and Dembele in there. What I think we really lack is a proper playmaker in CM though. Maybe someone like Kovacic or Seri.

Do you think we need one, when we have Dembele to drive us forward and Wanyama to shield the defence and one of the best creative players in Europe in Christian Eriksen?

I think there have been plenty of times when we have been a bit stagnant in CM with combinations of Wanyama, Dier and Dembele. Winks has a bit more flair and I'd be happy to see him get plenty more minutes, particularly when we're not under pressure in CM. I don't think another less conservative option would go amiss, although it's far from essential. Onomah might turn out to be that player though.
