Though I would like to see for at least one more season if Chadli steps up he is someone that has shown glimmers of potential.

I'd rather use Chadli in the LW spot, I certainly agree in that regard. I don't think he'd be any better, or any different, from Chadli in the role. Not sure why so many have hopped on the bandwagon of him being our answer to the left wing question.
I do however, think Remy is a far more complete striker than Defoe. He's quite good at coming back to interact with his attacking mids, and good at interacting with them in the box to find dangerous space, while Defoe is a far more selfish player that chooses to just pull the trigger when the space has closed. Remy certainly isn't perfect, but for the price, and how well he's done at two rather weak clubs since he's been here, I think he'd do quite well with us.

Chadli had 1 goal in 33 shots in the league. I want him to succeed as much as anyone but I keep seeing people throwing him into our starting XI and it is madness considering what he showed last season.

I would use him in a wide forward role. Do we need him - hard to say, the wide forward positions are quite weak for us at the moment. It really depends on how well Lamela and Chadli can do... I don't see Lennon as much use anymore and Townsend still, IMO, isn't ready/good enough to start PL games.

We could still get Remy and yet find a more compatible and suitable player for the left winger position. His ability to provide cover there is certainly an advantage in consideration of acquiring him, but we could do with a more complete winger for the role, a player entirely different from Chadli and Remy.

We need players who know where the back of the net is. That is our main issue, we do not score enough goals. And since keane and berbatov left, our strikers have been the worse culprits.
Not sure if Remy is the right player, but we need more players who can score in this league.

He started showing some form when played as second striker. Until Dim in his infinite wisdom decided his best position was defensive midfield.
I think he could definitely play the Rodriguez role in Poch's setup. He scored 19 goals as LWF in his final season Holland so he could potentially succeed there for us.
