Yves is more than a holder, he can carry and create and his finishing is way better. Let's put it this way, I highly doubt we would be investing in an Eriksen like player if Eriksen doesn't come. It's not a priority just a lovely option to have.

Look Bissouma is a Conte player, though maybe not as much as, say, Mkennie would be. Eriksen really isn't and there was a lot of drama at Inter when they signed him as Conte clearly didn't want him. Now, things changed Eriksen eventually proved he could play in a Conte team. But generally speaking, Contes structure leaves little room for traditional AMs, name me one traditional AM who was a regular starter for Conte? Bissouma is a player who does the fundamentals well, Conte traditionally likes functional unspectacular players in his midfield, maybe in a 3 man midfield he likes a technical player to hold it, though there have been exceptions (Pogba, just Pogba actually).
I don't think this is really the place but in these forums we see a lot of people inserting what they think is missing from the team and assuming that's the logic Conte thinks in. I can't read inside Contes mind but as someone who has followed his career from his first day at Juventus and watched all of his team's play, and seen fans baffled by him picking limited players ahead of more talented ones I feel people don't always see how Conte likes to build teams.
The ability to follow instructions and technically implement a micromanaged style of play is the most important thing for Conte and he is ruthless with people who can't do that, regardless of their reputation. Leaving out insigne during the Euros and playing Sunderland legend Giacherini instead is still something that baffles some Italian fans, but functionality of the players is key, he doesn't really like players that are inventive or individualistic. And generally that's what AMs are.
Kante plays for a side with way more of the ball though and in a double pivot. So you would expect the defensive side to be less in numbers then a player which plays for a team with less possession alongside a box to boxers and a more attacking minded midfielder. I Mean Kante out does him for progressive carries, dribbeles completed passes attempted for the same sort of reasons, not because he is inherently more progressive. Kantes tackles at Leicester were 4.7 tackles and 4.2 interceptions blowing everyone on this list out the water. But you are right that he is a defensive minded player. One that looks very nifty on the ball.In comparison to Kante, he outperforms him in the majority of defensive stats. He's up there with the numbers that Casemiro is delivering.
