To be fair, looking at it again, I think you may be right. I'm starting to think it is more like "Kap-oo". I've been assuming that the "oue" makes more of a "oo-weh" sound but unless it has an accent it wouldn't be pronounced.
I have cousins living in France, I shall ask one of them.
Edit: I think what I've got myself confused on is that "Kap-oo-eh" would be if there was a grave accent and his name was Capouè.
I actually checked this with my mother who is pretty fluent in French and she said it IS 'Ka-poo'. So that's what i'll go with.

I studied french for 5 years (albeit in Sweden, and at highschool level) and my grandfather was a language professor who specialized in french.
