It's true that Jose likes a CF who can be involved more but they are generally very mobile and he doesn't really have back up target man seen as we have Kane that doesn't make sense, he prefers another striker who offers something a bit different.
Think Remy, Milito, Benzema, etc a striker with a bit of pace too.

They've both been in the PL for the same amount of time (5 seasons), so it's easy to do a direct comparison of their PL goals scored:
Deeney - 47 goals (9.4 per season)
Wilson - 40 goals (8 per season)
If you take out each player's highest scoring season (Wilson's one good season was double his second best tally so likely to be a one-off), Wilson comes out looking even worse:
Deeney - 34 goals (8.5 per season)
Wilson - 26 goals (6.5 per season)
