Have another look. Bentancur passes forward to Son and immediately starts his forward run. Son lays it back to Pierre who hits the ball over the top. That's why its called a third man run. That tactic can be used in either half of the field against teams that play a high line, or a tight defence.

It was incredibly basic and you will not see many professional teams conceding a goal that simple. Højbjerg did not even have to hit the pass first time, he had forever to just loft it into their half. Not on Norwich player bothered running. Hapless defending. How you can even describe that as a tight defence is a mystery.
